Honestly I'd start taking math courses at a local CC, otherwise you're going to be a year behind in math compared to your other courses and it'll fuck over your schedule wrt pre-requisites. Also it's cheaper and if you don't do well it doesn't fuck over your GPA at the start in the case of scholarships/academic-based grants

I used to be a boss at maths (2nd round of the olympiad etc) but now I've forgotten it all as I never use it in my field (genetics).

Knowing maths doesn't make you smart. Maths can be just as much about rote-learning as any other subject.

Actually, I have a huge block set aside for studying. I seem to be retaining more than I did in high school. I'm trying to brush up on sites like Khan Academy, but not sure what I should be brushing up on. I'm comfortable enough financially to not have to work, and I have until September until school starts. Biggest thing I'm worried about is studying the wrong things and scoring too low on the placement tests.

i'm guessing you mean general chemistry by inorganic chemistry? the math is a little harder, but it's still just basic algebra. you might use the quadratic equation to solve solubility/dissociation/acid/base problems, and you might need to use logarithms.

i don't know what technical physics and technical math are, sorry.

if you go to a college in the US, it's almost guaranteed that your school offers free tutors. if you're having trouble then suck it up, ignore your pride, and GET HELP FROM THEM.
