what bread do you guys use? how is it toasted or dressed up before the stuff goes on it? bread is the foundation of a sandwich and probably the ratio of bread to stuff is proportionate to how delicious the bread is. if the bread is so delicious it could be eaten alone, would that result in less stuff going on top and create a lighter sandwich overall? if the bread is bland, you want to put more stuff on top to make up for the poor foundation resulting in a top heavy sandwich.
