Could I survive and be healthy if I only ate sandwiches both for lunch and dinner?

I want to spend as little time as possible preparing, eating and cleaning my meals. I want to eat about 2.500 calories a day and have a balanced nutrition.

I freeze my bread and when I thaw it (sans toaster) it's basically 100% fresh. All the fresh veggies, especially lettuce, is a pain in the dick. I live alone and have to buy a whole head of lettuce and fucking hell it's tough to not waste food. Same with tomates and lots of other stuff.

Sure, but you need to be careful. Put it on sourdough or whole wheat bread and dont buy presliced meats - the salt is far too high and the nitrates are and for you. If you cook up a chicken or turkey once a week and put that on it wit some veggies, that's a very balanced meal and you should be good to go
